crunchy salad enjoyment

Traditional, crunchy and fresh: our Greek farmer’s salad always tastes good! With feta, olives and vegetables, simple ingredients become such a delicious side dish. Also great for parties!

INGREDIENTS:

1 organic lemon

2 red onions

1 clove of garlic

2 peppers (approx. 400 g)

5 vine tomatoes (approx. 500 g)

1 cucumber (approx. 500 g)

a few sprigs of oregano and parsley

200 g feta (45% fat in dry matter)

100 g black olives (in oil)

4 tbsp olive oil (cold-pressed)

1 pinch of salt

1 pinch of freshly ground pepper

PREPARATION:

Step 1: Wash the lemon in hot water, pat dry, finely grate the peel. Halve the fruit and squeeze out the juice. Peel the onions and garlic, cut the onions into rings and finely chop the garlic.  Step 2: Wash the vegetables and drain. Remove the seeds from the peppers and cut into cubes. Remove the stalks from the tomatoes and cut into eighths. Quarter the cucumber lengthways and cut into slices.

Step 3: Wash the oregano and parsley, drain, pick off the leaves and chop. Drain the feta cheese and olives, cut the feta into cubes.

Step 4: Mix the olive oil with the garlic, lemon juice and zest and mix with the onions, peppers, tomatoes, cucumber, half of the herbs, salt, pepper, feta and olives. Serve the Greek farmer’s salad sprinkled with the remaining herbs.
